Our 100% Bigga dough, is a traditional Italian dough made with a high hydration ratio and pre-ferment called “Bigga.” This 72 hour fermentation enhances the dough’s flavor, resulting in a rich taste and nutty aroma. When baked, it yields a crispy, golden crust with a light, airy crumb, perfect for various toppings. Its elasticity allows for easy stretching , making it ideal for artisanal-style pizzas that elevate the pizza experience.
